I think we all know the health benefits of adding more veggies to your diet. Many health experts recommend a minimum of 5 fruit/veg daily. In this post, I want to share 3 easy ways to add more veggies to you day.
Add a side salad to your meals
Make sure you’re adding plenty of veggies to each meal, either on the plate, as a side or as a starter. If I’m having a meal that hasn’t got a lot of veggies in it, then I’ll have a nice mixed salad as a starter. Otherwise, I try to have half of my plate filled with veggies.
Here’s a nice side salad
Chopped lettuce of your choice
Cucumber diced into small chunks
5 cherry tomatoes (quartered)
A few slices of red onion cut into smaller pieces
Always have homemade soup on the go
I try to make a pan of soup that will last me a couple of days. You can pretty much throw any veggies in the pan and make a hearty soup filled with goodness.
1/2 chopped up butternut squash
1/2 sweet potato chunks
1 red onion
1 Red pepper
Vegetable or chicken stock with about a pint of water (to cover veggies)
Low cal olive oil spray
How to make this wonderful warming and beautifully coloured soup
Spray a pan with a few squirts of olive oil, add black pepper, turmeric and onions and a small amount of water.
Add all other veggies and pour over the stock
Bring to the boil and then simmer for approx 20 minutes (until veggies are soft)
Serve and enjoy.
Tip: You can eat this soup as it is or blend it up to make a nice creamy soup. Both ways are delicious.
