So it’s day 2 of my 6-day simple meals challenge
I have to say I’m a creature of habit most morning’s so I had my usual 2 Weetabix for breakfast.
I’ve had a banana and apple as snacks this morning.
Tuna Pasta simple meals lunch
I’m really cold today, so I wanted something warm for lunch, so I popped some pasta on to boil (so that it’s just starting to soften, drained the pasta and mix in tuna. Then I added some grated cheese a bit of black pepper and another good mix.
Note: Cheese wasn’t really in my plan for the week. I bought a grater with a really fine grate.
I use a rotary grater and absolutely love. Seriously if you like grated cheese and you don’t have one, it’s a great investment. You get loads and loads of fluffy cheese with the smallest piece of cheese.
This is a real mindset trick. Because it’s so fine and fluffs up, you feel like you have a load of cheese when in fact you’ve only used a bit.
I threw together a bit of a salad. Lettuce, cucumber and red pepper. Super easy. DONE.
Doesn’t it look wonderful and colourful? Ideally, I’d have used wholewheat pasta, but I hadn’t planned this into my challenge. I wasn’t expecting it to be so cold and feel like I needed warm meals so much.
Notice I’ve got the big rimmed plates. This is a good tip to reduce your portion size.
Tonight I’m having chicken breast and I’m planning ahead for tomorrow too. I’m putting in extra chicken whilst the oven is on so that I can have some cold for my lunch tomorrow.
Sorry, no picture of this meal. We were late getting home, so it was nice to have an easy meal. I popped the chicken in the oven with the spices on and a little spray oil, microwaved the potatoes for about 5 mins whilst I popped to the toilet and got my trainers on. Stucke the lot in the oven and Jack and I headed back out to take Indie for a walk.
I finished the meal off with some sweetcorn heated quickly in the microwave. Super easy and nice and tasty.
Update from day 1. I managed to finish just over 10,000 steps.
Today has been a more active day so far so I’m already up to 11, 058 steps.
Early to bed
Another half an hour and I’m off to bed.
