Today I thought I’d share what I’ll be eating throughout the day today. These are my main meals and snacks for the day to lose weight.
Weight Today : 11 stone 10lb
I’m aiming for a 1-2 lb weight loss each week.
Drinks for weight loss
2 Glasses of water first thing in the morning – 1 as soon as I get up and 1 with breakfast.
I do have my cup of tea in the morning when I start work and I will probably have another cup this afternoon.
I’m thinking of trying Green Tea and would love to hear if you drink it and what you think of it.
I will aim to drink 5 + glasses of water (big glasses) in total throughout the day.
Main Meals for the day
For breakfast today, I had 2 Weetabix with semi-skimmed milk and about 3/4 of a tsp of sugar. I’ve cut down from 2 tsp.
My main meals for today are a small toasted pitta bread, chopped egg, cucumber slices and lettuce, plus and apple for lunch.
For my evening meal which I’ll eat with my son, we’re having pizza. I buy Just roll puff pastry. I cut the pastry in half, use half and save half for another meal. I cut into 4 smaller squares and top with tomato puree (ketchup for my son), pieces of ham and a light sprinkle of cheese.
I know pizza isn’t the healthiest meal but I keep the portions small and add my own topping so that I can keep the calories lower. I’ll serve it with a big mixed salad and it’s a really nice treat for my son who loves this meal.
Snacks for the day to avoid unhealthy nibbles
Today I made a pan of veggie soup that I’ll have as my snacks mid-morning and mid-afternoon.
I’ll also have a banana and some nuts/raisins in a small bowl.
If I need a snack in the evening, I allow myself 2 rich tea biscuits or I’ll have some veggie sticks.
I try to avoid fruit later in the day as it does have its own natural sugars.
Tomorrow is my food shopping day, so I like to use up any veggies I have leftover in a healthy veggie soup. If I have any meat leftovers, I’ll often pop that in too.
Tip: If you like meat in your soup, when you get leftovers, pop them in small bags in the freezer and pull out to add into your soups when you need them.
Okay, so what’s in today’s Veggie soup?
Tiny drizzle olive oil
1 red onion chopped
2 big carrots
1 medium/big sweet potato
Sprinkle of turmeric
2 cups of veg stock
This is enough to have 2 good sized bowls of soup. Some in the morning and some mid-afternoon.
I add a drizzle of olive oil to the pan and put on a medium heat.
Add the vegetables and turmeric and gently fry for a couple of minutes.
Add the stock and bring to the boil, then simmer gently until all the veg is soft.
Allow to cool slightly and blend with the hand blender.
I think it’s well worth investing in a hand blender if you do like soups. I had a can of soup the other week and couldn’t believe how much (other than veg) it had in it. When you have a hand blender, you can quickly and easily whip up a nice creamy soup and you’ll know exactly what’s gone into it.
Okay, so that’s what I’m having today.
Planning my meals and snacks for the day really helps me to stay on track with my own weight loss goals. Also, when I know I have mid-morning snacks and mid-afternoon snacks planned in advance I don’t let myself get too hungry and binge and then I’m not tempted by things that won’t help me on my weight loss journey.
Oh, just another quick tip. Whilst I was cooking the soup, I also popped 4 eggs onto boil (I can multi-task you know). 2 for lunch today and 2 for snacks tomorrow. Whenever you can think ahead to save time and have snacks ready in advance.
