So the next simple meals challenge starts tomorrow. I’ve chosen three meal base’s for the next 6 days.

I decided I didn’t want to meal plan during this challenge, which meant making sure I have plenty of my three base meals so that I can just decide as I go along.
My base meals are tuna, chicken and steak.
My simple meals shopping
12 chicken fillets
8 Tins of tuna (thankfully it was on offer)
8 thin steaks (thin cut steaks)
Loads of fresh salad and fruit.
Cous cous, baking potatoes, brown rice.
I’ve also got a nice bag of organic mixed nuts and 1 block of good quality dark chocolate.
Weetabix and oats for breakfast (plus milk)
Note: I won’t be eating all of this in the 6 days, my son will be having some of it and he’s not a fan of tuna, so he’ll be having a few different bits.
Loving the simplicity
I have to say, I’m really loving the simplicity. My plan is to really keep the meals simple. I’m not going to be following recipes.
I’ve got some nice spice that I like on the chicken and steaks. I may pop the steaks in the slow cooker with an easy sauce, but in general, it will be simple, clean eating for the next 6 days.
I have to admit, I’ve been snacking on not so healthy options a bit lately, so I think I’m going to have to think about making myself snacks using only what I’ve listed above.
I’ve included the chocolate. It’s a good quality 80% cocoa. Because I’ve been snacking a lot and not making great choices, I decided to add in the chocolate. I find that I can just have a couple of small pieces of chocolate of this kind rather than wanting to eat the whole bar in one go.
Okay, so I’m ready to get started in the morning. I really do like this idea of not having to think very much at all about what our meals will be.
