I don’t know about you, but I definitely have a soup season. I love a nice warming, homemade soup once the weather turns to cold.
Now one thing I’ve learned is that most things work when it comes to making soup. Okay, sometimes it doesn’t look so wonderful but as long as it tastes great, that’s what matters.
Not looking so good is definitely the case with today’s soup but it still tastes lovely.
Here’s what’s in my green looking soup today.
Throw in whatever leftovers you have – Warm and tasty soup
Approximately 1 litre of water
2 chicken stock cubes
A sprinkle of cumin
A sprinkle of turmeric
2 red onions
Broccoli (about 3/4 of a full head)
Yep, it’s the broccoli mixed with red onion that’s making it look a bit weird.
Oh, I almost forgot, I had a bit of gammon left over, so I chopped it up and added to the pan.
Then I whizzed it with the hand blender and ta-dah I have a lovely hot and healthy lunch. Just what I need on this cold day.
Tomorrow is my weekly shopping day, so it’s fantastic using up all my healthy veggies.
I’ll keep the soup hot in the slow cooker today, so that I can just get some whenever I need a warm up and something nice to eat. As I’ve added gammon, i won’t keep it after today.
I’m a real snacker, so this helps make sure I’m filling up the healthy way. We all hear that we should be eating 5+ fruit/veg a day. This is a great way to add more veggies to your day. Although I understand that a soup only counts as one of your veggies, no matter how many veggies are in it.
