Hey Everyone, I love healthy lunch ideas and this one came from my nine-year-old niece Elizabeth, so they’ve ended up being known as Elizabeth potatoes.
This is such a super easy meal. Pop your potatoes in the oven for about 40 mins until they start to feel soft. Remove from the oven, slice in half lengthways and allow to cool. Once they are cool enough to handle, scoop out the potato from the middle and pop into a bowl.
Chop up your mixed peppers. Cut them really small and add to the bowl.
Add some grated cheese.
Mix together and squish (yes that’s a technical term) together and fill the potato skins.
Pop back into the oven until slightly browning on top. Add a nice side salad and you’re done.
EVEN HEALTHIER OPTION: Swap your normal potatoes for sweet potatoes.
SPEED IT UP TIP: Start your potato off in the microwave to save a little oven time. Although I find the whole scooping out process easier if the skins have started to crisp up a little.
