For the simple meals challenge, I wanted to share my simple meals diary each day. I wanted to share my meals to give you some simple ideas and I really want to make myself accountable.
Simple Meals Challenge Recap
3 base meals – Mine are tuna, chicken and steak
Unlimited fruit and veg
I’ve also added Weetabix or oats for breakfast
Mixed nuts small quantities
My intention is to keep the meals super simple for this challenge.
Tuna salad lunch
I was out this morning and usually call at mums for lunch with my mum on a Wednesday, so I took lunch with me.
Lettuce, cucumber, radish, red pepper,grapes, kiwi and tuna. I added a splash of balsamic vinegar.
Can’t get much easier than that can you?

Slow cooker steak and roast veggies
This is so simple. I bought thin cut steaks (nice and cheap) gave them a quick fry in the pan with a spray of oil.
Then I popped them in the slow cooker for around 4 hours with a sauce of gravy granules, oxo and a squirt of tomato ketchup.
Roasties – Potato, carrots, red onion and sweet potato.
Whilst this meal does take a little longer because of the cooking time, the prep is so super quick and easy, then you just leave it to cook.
Small portion mixed nuts
4 very small squares of dark chocolate.
I’m on 7300 at the time of writing this diary entry. It’s 7.30pm so I’ve got a way to go yet, but I’m going to get moving and get my steps up now.
I’ve done some exercises with my weights today.
